WHere is a simplified version of a drink featured on a new cocktail list. Designed as a batch premix that's bursting with essence of a festive period, rendering it perfect for hosting a festive gathering. Any leftover syrup to use in brunch beverages, sweets, or to mix more rounds of this cocktail.

Yields 10 servings
Ingredients for the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Premix (yields 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Method
Making the Syrup: Combine all the items in a pot, bring to a gentle boil, agitating so the sugar melts. Then, turn off the burner and leave to cool down fully. Decant to a clean bottle, seal keeping it in the fridge, it can be stored for up to four weeks.
To make Batch Mix: Pour the specified spirits and syrup into a sizeable container, allow it to infuse for one hour, then pass it through preferably using cheesecloth, making it perfectly clear.
For serving: Add 85ml of your batch mix into a stirring glass filled with ice, and agitate carefully for one minute to cool it down. Filter into an frosted cocktail glass or a similar vessel, garnish with some cranberries and complete it with a light spray with the mandarin essence over the top.
